CULA 125: Vegetables, Potatoes, Grains, and Pasta

This course will expand on prior knowledge but also includes vegetable cookery,
pasta and rice cookery, and food presentation. Theory and practical experience in the use of hand tools, equipment, and materials used in the industry. The basic composition of food products, produce, and staple groceries, practical experience in the preparation and serving of salads, and salad dressings, vegetables, potatoes, and sauces. Some emphasis will be placed on the use of herbs and spices in the preparation of various dishes and foods as used in the industry.
